    Le mélange 3 baies est la combinaison de deux vrais poivres provenant du piper nigrum à savoir le poivre blanc et le poivre noir et d’une baie, la baie rose. Il ne faut pas confondre les baies roses avec du poivre rose ou rouge. Effectivement le poivre rouge provient du piper nigrum et pousse sur des lianes. Il est récolté alors que le fruit est en pleine maturation. Les baies roses, elles, poussent en grappes.

    Le poivre noir est un véritable poivre provenant du piper nigum. Au cours de leur évolution les poivres connaissent plusieurs stades de maturation, pour obtenir du poivre noir il faut tout d’abord récolter le poivre quand il est vert donc non-mûr. Il est alors séché au soleil et devient noir au bout de huit jours environ.
